We are looking for a Senior In-House Development Manager to join our team at Balliol, Balliol Business Park in Newcastle Upon Tyne on a Full Time and Permanent basis.

To provide a full and comprehensive Product Development / Food Technology service across all in house produced product categories and applications.


£40,000 - £45,000 per annum (depending on experience)

Work Pattern

40 hours per week, Monday to Friday. Flexible start/finish times, kitchen/office based and home working 1 day per week.

Job Description

Support the PLM process

  • Ensure that the In-house Development function fully complies with the requirements of the PLM process.
  • Bench creation/ formulation of new & existing products for in house production (bread/ferments, savoury & sweet) from a scratch perspective as and when required.       
  • Generate product specifications for new concepts and provide inputs to the technical team for changes to existing products.
  • Interface with Process Development to develop potential opportunity to bring external products in house where key criteria of longevity, quality and cost can be delivered.
  • Regular ideation/ innovation showcasing new concepts based on current manufacturing capability across all technology platforms.
  • Develop a range of packaging solutions across category and technology platforms to enhance product quality and shelf life, reduce costs, and improve efficiencies and margins. This will include retail, Bakery, and transit packaging.

Nutrition / clean label / allergens / gluten free / vegan

  • Reformulate existing and new products to fulfil the current Greggs Plc nutritional policy, any new Public health advice, legal requirements, and customer trends. Assess new technology thinking to identify the opportunity to reduce and minimise the use of e-numbers in our products across all categories.  Reformulate in house products using allergen free ingredients where possible without changing the eat characteristics and shelf life.
  • Develop ranges of Gluten free & Vegan products that can be manufactured to the required standards

More of what you'll do

Process industrialisation / optimisation

  • Acting in an advisory capacity for the process team on product quality for standard in house production and new industrialised concepts. A continual review of all formulations associated with the technology platforms for in house production to enhance delivery of quality and efficiency.
  • Provide solutions for those ingredients that are at Risk or no longer available to the business. This may include in house and third-party ingredients and products.

Value engineering

  • Reformulate existing products to improve product margin while maintaining or improving product quality, shelf life and efficiencies.


  • Develop a team who are competent in Product Development / Food technology across all categories and technology platforms.


  • Strong communication skills internal and external, ability to lead a team, work to deadlines and under pressure, trouble shooting and problem-solving skills.
  • Previous customer facing experience and presenting skills required.
  • Practical skills essential and experience of bench creation for bakery related food on the go products.
  • Driving license is required.
  • HND/Degree level food science, at least 5 years product development experience.
  • Good knowledge of raw materials and ingredient functionality.
