This is a Full Time and Permanent position based at our Product Development Site in Newcastle Upon Tyne, blend of office and working from home.

We are looking for a practical and hands-on passionate, creative, innovative person with ingredient and product development experience. Being able to demonstrate food trend understanding and expertise. Showing experience in collecting, interpreting and analysing customer insight information and market trend data. You are able to use this knowledge to articulate detailed product briefs and specify the quality attributes, product format, taste and sensory characteristics. Sensory and organoleptic skills are a must!


£25,000 - £30,000 depending on experience

Work Pattern

40 hours per week, Monday to Friday. We are happy to discuss flexible start/finish times - the role will be a mix of kitchen, office and working from home.

Job Description

You’ll fit right into Greggs as a Product Developer if:

  • You have a food and/or nutrition related degree or Qualification
  • You have an understanding of the product development process, including products made in a retail shop environment and within the bakery manufacturing process
  • You have an understanding of the Product Lifecycle Management (PLM) process and are able to multitask to meet multiple challenging deadlines. You are able to manage and prioritise multiple projects running at different timelines and be flexible when needed
  • You have experience in producing commercially viable kitchen development samples and can confidently manage development through industrialisation to launch
  • You have a good understanding of ingredient functionality, allergen laws and nutritional guidelines. You have the ability to balance recipes from both an organoleptic and nutritional perspective
  • You have capability in calculating nutritional and costing information and writing finished product specifications
  • You have an understanding of how to carry out sensory evaluations and interpret and report the results
  • You have strong interpersonal skills. You demonstrate enthusiasm and have the ability to train and inspire our teams for product launches
  • You have excellent verbal and written communication skills with strong attention to detail
  • You are able to work collaboratively across a number of departments as well as with external product or ingredient suppliers
  • You are able to work in line with company values
  • You are fully computer literate and conversant with all MS packages
  • You hold a Full UK Driving Licence, as some travel is required

What you'll do

Reporting into the Product Development Manager, our product developers play a key role in supporting the PLM process to ensure that the product development function complies with all requirements to successfully deliver fantastic Greggs products.   

Our product developers are accountable for the development and delivery of a range of tasty Greggs brand products to a brief and timescale defined by the category plan. The product developer will conduct in depth competitor and customer analysis to build an expertise of the food to go category which will contribute and influence the category plans.

Post category plan, our product developer will define and articulate detailed product briefs and produce commercially viable kitchen development samples with accurate costings that meet margin targets and nutritional health targets. 

As a product developer, you will develop new products from concept to launch and/or redevelop existing products. You will complete assessments of both ingredients and fully finished products across a number of categories, including ambient, chilled and frozen. You must ensure that all products developed are suitable for our shop equipment and processes.  Our product developer will take the products through our phase gate process, with primary involvement in the development and industrialisation phases. You will generate recipes, complete shelf-life testing, nutritional calculations, product costings and specifications for all new products and redevelopments where appropriate. You will work heavily with both our retail teams and our supply chain manufacturing sites.

You will be required to carry out sensory evaluations to validate product attributes and set organoleptic and quality standards for all development.

You will work collaboratively across commercial, marketing, retail and supply chain teams, as well as external product or ingredient suppliers to deliver customer centric, quality products which deliver and live up to Greggs brand personality.
